Chocolate Chip Cookies

Sorry, again no picture. I got this from the Weight Watchers site but just changed it a tiny bit so it will be less points. So far it is my favorite cookie recipe and I have to hide them from my family.

By Weight Watchers and Davianne

2 tbsp reduced fat butter
2 tsp apple sauce
1/2 c. brown sugar
1 tsp vanilla
dash of salt (1/8 tsp)
1 large egg white
3/4 c. all-purpose flour
1/4 tsp baking soda
1/2 c. semi-sweet chocolate chips (mini's can go farther)

Heat oven to 375 degrees. Beat first 6 ingredients together until smooth. Add the rest and mix well. Divide into 24 balls and bake on sprayed cookie sheet for 4-6 minutes.

Only 1 pt plus each! And worth it every time!

Low-fat Oatmeal Raisin Cookies

Sorry, no picture. But these are YUM! I really love cookies and these hit the spot.

1/2 c. reduced fat butter
1 c. brown sugar
1/2 c. stevia or truvia
3 egg whites
1 tsp vanilla
1 1/2 c. all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 c. Oats (quick or old fashion, uncooked)
1 c. raisins

Heat oven to 350 degrees. Beat first 5 ingredients together until creamy. Add next 5 ingredients and mix well. Then stir in raisins until evenly mixed in. Make 4 dozen round balls and bake on cookie sheet for 10 to 12 minutes.

So long as you make this into 4 dozen cookies they will be only 1 pt plus each!!

Davianne's Sweet Potatoes

This one is a Huge hit with my family! They had no idea it was low fat until I told them after they ate and loved it!

3 sweet potatoes or yams
1/3 c. sugar
1/3 c. unsweetened pineapple juice
1/4 c. reduced fat butter-melted
1 tsp vanilla
1 1/2 c. mini marshmallows

Topping
1 c. chopped pecans
2/3 c. brown sugar
1/4 c. reduced butter-melted

Cut ends off sweet potatoes. (they are too stringy and gross) Chop sweet potatoes into large wedges and boil until they do not stick to fork when stabbed. Drain out all the water, let cool then peel off the skins. Put skinless sweet potatoes in big mixing bowl. Do not mash, they will naturally get mashed up when stirring everything together. Add sugar, unsweetened pineapple juice and melted butter and mix well. Then add marshmallows and mix again. Spray 9x13 pan with cooking spray and spoon in sweet potato mix. Mix all the topping ingredients together and spoon/spread over the top.
Put in oven at 350 degrees for 40-50 min.

Let cool for a little and serve warm.

Serves 12 (about 1/4-1/3 c. servings) 7 PointsPlus each

Here I go.....

This is me in the summer of 2010 at my heaviest. I'm trying really hard to suck everything in in this picture but as we can all see it's NOT working.

I finally couldn't stand it anymore and joined Weight Watchers the first week of Aug. Since then I have lost 18.2 lbs! I decided to start this blog with my sister to put up healthy recipes that have been tried and liked. Proof that it doesn't have to be full of fat to taste good! And hopefully this will help motivate other's to be healthier too. ♥
